

Watermelon Aperol Margaritas

Fresh watermelon, tequila, lime, and Aperol come together for a refreshing drink that's equal parts margarita and spritz—perfect for backyard BBQs, pool parties, and Fourth of July celebrations.

Ingredients
12 cups seedless watermelon, cubed, divided
1 cup tequila blanco
½ cup Aperol
¾ cup fresh lime juice
¼ cup agave syrup (optional)
2 cups ice
(Optional- a splash of Cointreau.)
Garnish
Frozen watermelon cubes
Tajín
Lime wedges
Fresh mint (optional)
Instructions
Step 1: Freeze 6 cups of cubed watermelon until solid.
Step 2: Blend the remaining watermelon until smooth, then strain to make fresh watermelon juice.
Step 3: Rim serving glasses with Tajín.
Step 4: Fill each glass with frozen watermelon cubes instead of regular ice.
Step 5: Combine watermelon juice, tequila, Aperol, lime juice, agave (if using), and ice in a large pitcher. Stir or shake until chilled.
Step 6: Pour the margaritas over the frozen watermelon cubes.
Serving & Finishing Touches
Garnish with lime wedges and fresh mint if desired, then serve immediately.
