Benedictine
1 cucumber, peeled & deseeded
8 oz cream cheese, softened
1 1/2 tbsp mayonnaise
1 1/2 tbsp shallot or red onion, finely chopped
Salt & pepper
Pimento Cheese
4 oz cream cheese, softened
1/4 cup mayonnaise
8 oz sharp cheddar, grated
1/4–1/2 tsp garlic powder
1 roasted red pepper, diced
Salt & pepper
Country Ham Salad
4 oz country ham, cubed
12 oz city ham, cubed
4 oz cream cheese, softened
1/4 cup mayonnaise
3 tbsp sweet pickle relish, drained
2 tbsp Dijon mustard
1/2 tsp black pepper
Salt (to taste)

Ingredients
Step 1: Make the Benedictine
Grate cucumber and squeeze out excess liquid. Mix with cream cheese, mayonnaise, and onion until smooth. Season and chill for 1 hour.
Step 2: Make the Pimento Cheese
Beat cream cheese and mayonnaise until smooth. Add cheddar and garlic powder, then fold in roasted red pepper. Season to taste.
Step 3: Make the Country Ham Salad
Pulse both hams in a food processor until finely chopped. Mix cream cheese, mayonnaise, relish, mustard, and pepper until smooth, then combine with ham. Chill 30 minutes.
Step 4: Assemble
Spread each mixture onto bread or serve with crackers. Slice into finger sandwiches or serve as a trio platter.

Instructions

For a classic presentation, remove crusts and cut into small tea sandwiches—or layer into triple-decker bites for a more elevated look.
