For the Salad:
2 cups shredded rotisserie chicken
1 cup shredded carrots
1 cup shredded red cabbage
1 head bok choy, thinly sliced
1 red bell pepper, thinly sliced
3 scallions, thinly sliced
For the Sesame-Lime Vinaigrette:
Juice of 1 lime
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons olive oil
Salt, to taste
Freshly ground black pepper, to taste

Ingredients
Step 1: In a large mixing bowl, combine the shredded rotisserie chicken, carrots, red cabbage, bok choy, red bell pepper, and scallions.
Step 2: In a small bowl, whisk together the lime juice, rice vinegar, soy sauce, sesame oil, and olive oil until fully combined.
