Ingredients

For the Salad:

  • 2 cups shredded rotisserie chicken

  • 1 cup shredded carrots

  • 1 cup shredded red cabbage

  • 1 head bok choy, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 3 scallions, thinly sliced

For the Sesame-Lime Vinaigrette:

  • Juice of 1 lime

  • 2 tablespoons rice vinegar

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 2 tablespoons olive oil

  • Salt, to taste

  • Freshly ground black pepper, to taste


Instructions

Step 1: In a large mixing bowl, combine the shredded rotisserie chicken, carrots, red cabbage, bok choy, red bell pepper, and scallions.

Step 2: In a small bowl, whisk together the lime juice, rice vinegar, soy sauce, sesame oil, and olive oil until fully combined.

Step 3: Season the vinaigrette with salt and freshly ground black pepper to taste.

Step 4: Pour the vinaigrette over the salad ingredients.

Step 5: Toss thoroughly until the chicken and vegetables are evenly coated.

Step 6: Taste and adjust seasoning as needed.

Step 7: Serve immediately, or allow the salad to sit for 10–15 minutes so the flavors can meld.
