


Potato and Egg Frittata Heroes

Chef Ayesha Nurdjaja shares one of her favorite childhood recipes—a classic Brooklyn beach-day sandwich inspired by her mother's cooking. Tender potatoes, caramelized onions, fluffy eggs, and Pecorino Romano come together in a hearty frittata that's tucked into toasted semolina rolls with provolone for the ultimate picnic or grab-and-go meal.

Ingredients
For the Frittata
⅓ cup extra virgin olive oil
2 cups sliced onions
2 cups Yukon Gold potatoes, peeled, sliced, and parboiled
½ teaspoon kosher salt
½ teaspoon black pepper
6 eggs, beaten
½ cup grated Pecorino Romano
½ teaspoon garlic powder
For the Sandwiches
6 semolina hero rolls
6 slices provolone cheese
2 tablespoons chopped parsley
Extra virgin olive oil, for finishing
Instructions
Step 1: Preheat the broiler. Peel and slice the potatoes into ¼-inch slices. Cover with cold, salted water and cook until fork tender, about 8–10 minutes. Drain and set aside.
Step 2: Heat the olive oil in a large oven-safe skillet over medium heat. Add the onions and sauté until softened.
Step 3: Stir in the cooked potatoes and garlic powder. Season with kosher salt and black pepper.
Step 4: In a bowl, whisk together the eggs and grated Pecorino Romano. Pour the egg mixture evenly over the potatoes and onions.
Step 5: As the eggs begin to set, gently pull the cooked egg from the edges toward the center, allowing the uncooked egg to flow underneath.
Step 6: Once the eggs are mostly set but still slightly jiggly in the center, transfer the skillet to a 425°F oven until fully cooked. Finish briefly under the broiler until lightly browned on top.
Step 7: Let the frittata cool slightly, then cut into six portions.
Step 8: Slice the semolina hero rolls and layer each with a piece of frittata and a slice of provolone. Sprinkle with chopped parsley and finish with a drizzle of extra virgin olive oil.
Serving & Finishing Touches

Serve warm or at room temperature for breakfast, lunch, or your next picnic.
