  • 3 whole eggs

  • Fresh parsley, chopped

  • Fresh tarragon, chopped

  • Fresh chives, chopped

  • 1 tablespoon butter (plus extra for finishing)

  • Salt

  • Optional: small handful shredded cheddar cheese

Ingredients

Step 1: Set a nonstick pan over medium heat.

Step 2: Whisk eggs thoroughly with a fork until fully combined and no streaks remain.

Step 3: Mix in herbs and salt.

Step 4: Add butter to the pan and swirl to coat, reserving a small amount for finishing.

Step 5: Pour eggs into the pan and gently move them with a spatula, forming soft curds while scraping the sides.

Step 6: Once eggs cover the bottom but remain slightly loose, remove the pan from heat.

Step 7: Add cheese (if using), cover with a lid, and let rest for about 2 minutes.

Step 8: Uncover and gently roll the omelet onto a plate.

Instructions

Brush with softened butter and finish with fresh herbs.
