
Ham and Cheese Croquettes with Spicy Sweet Chili Doritos

These Doritos-crusted ham and cheese croquettes are the ultimate Super Bowl snack — crispy, cheesy, handheld, and packed with bold flavor.

2 tablespoons butter
1 small onion, finely diced
2 tablespoons flour
¾ cup milk
1 bag Spicy Sweet Chili Doritos, finely ground
6 oz sliced ham, chopped fine
3 oz sharp cheddar cheese, grated
3 oz Gruyère cheese, grated
1 teaspoon Dijon mustard
Salt and pepper to taste
For the Coating
2 large eggs, beaten
1 cup flour
Sweet and Tangy Chili Doritos, finely ground
Vegetable oil, for frying

Ingredients
Step 1: Melt butter in a saucepan. Add onion and sauté until tender.
Step 2: Stir in ground Doritos and flour; cook until mixture resembles wet sand.
Step 3: Slowly whisk in milk. Season with salt and pepper. Stir 5 minutes.
Step 4: Add ham, cheeses, and Dijon mustard. Mix until smooth.
Step 5: Transfer to a shallow container and chill 4 hours or overnight.
Step 6: Shape into strips, cut diagonally into triangles, and refrigerate 1 hour.
Step 7: Dredge triangles in flour, egg, then crushed Doritos.
Step 8: Fry in hot oil until golden and crispy. Drain and serve immediately.

Instructions

Keep them crispy! If you aren't serving them the second they come out of the oil, keep them on a wire cooling rack over a baking sheet in a warm oven (200°F) to maintain that signature Doritos crunch.
