A classic French bistro sandwich elevated with a creamy Mornay sauce, melty Gruyère, and a perfectly runny egg, this Croque Madame is the ultimate indulgent grilled cheese.

Ingredients

Mornay Sauce

  • Butter

  • Flour

  • Whole milk

  • Salt

  • Black pepper

  • Nutmeg

  • Gruyère cheese

  • Mustard (added in transcript variation)

Sandwich

  • Brioche bread (buttered)

  • Ham slices

  • Gruyère cheese

  • Mornay sauce

  • Eggs

  • Butter

Instructions

Step 1: Melt butter in a saucepan and whisk in flour to create a roux.

Step 2: Gradually whisk in milk, cooking until thickened.

Step 3: Add salt, pepper, nutmeg, and Gruyère cheese; stir until smooth.

Step 4: Stir in mustard for added flavor (transcript variation).

Step 5: Butter both sides of the bread and toast in a pan until golden.

Step 6: Add cheese and ham, then transfer to oven to melt and heat through.

Step 7: Top with Mornay sauce and return to oven until bubbly and golden.

Step 8: Fry eggs in butter (steam briefly to set whites).

Step 9: Place egg on top of sandwich and serve.
