
Watermelon Cucumber Salad in a Watermelon Bowl

Nothing says summer quite like watermelon. Served inside a carved watermelon basket, this Watermelon Cucumber Salad combines juicy watermelon, crisp cucumbers, creamy feta, and fresh herbs for a colorful side dish that's perfect for cookouts, picnics, and backyard gatherings.

1 large seedless watermelon
2 English cucumbers, chopped
8 oz block feta, drained and crumbled by hand
½ cup fresh mint, chopped
¼ cup fresh basil, chopped
Juice of 2 limes
2 Tbsp olive oil
Kosher salt
Fresh cracked pepper

Ingredients
Step 1: Cut two triangular sections from the top of the watermelon, leaving the center intact to create a basket handle.
Step 2: Using a melon baller, scoop out enough watermelon to create a serving bowl while leaving the shell sturdy.
Step 3: Reserve the watermelon balls and use any remaining watermelon to make fresh juice for the margaritas.
Step 4: In a large bowl, combine the watermelon balls, chopped cucumbers, hand-crumbled feta, mint, and basil.
Step 5: Drizzle with olive oil and lime juice.
Step 6: Season lightly with kosher salt and freshly cracked pepper.
Step 7: Toss gently until everything is evenly coated.

Instructions
Spoon the salad into the carved watermelon basket and serve chilled.
